Welcome to Ithaca Kombucha Company (IKC)! We are a small, health conscious, eco-friendly, company whose mission is to have the highest quality and best tasting kombucha products on the market. We aim to be a household name among kombucha enthusiasts wishing to drink or brew their own kombucha. Our drinks, vinegars, and sauces are crafted in small batches, made with organic kombucha.
Brewing kombucha and crafting sauces and flavored drinks takes a great deal of patience and care. The SCOBY (a culture of good bacteria and yeast present in kombucha production) has a mind of its own. It could quickly overtake a batch if it were to sense that we are not giving it the level of attention it deserves. We carefully monitor quality while preparing, brewing, and bottling our products. It's all worth it at the end of the day when we crack open an ice cold kombucha or sit down to a dinner topped with one of our life changing sauces (yes I said life changing, we will make no apologies).

WHAT WE DO
BREW – Organic kombucha and quality ingredients, the best kombucha and kombucha based sauces you have ever experienced. We are planning to pair up with a brewery and do larger-scale production of our kombucha beverages to in 2016 to meet demand.
TEACH – We offer free resources on kombucha recipes (alcoholic and non-alcoholic) and info on how to brew your own kombucha. If you would like to buy one of our extra SCOBYs to make your own homemade batch please email us on the contact page, we'd love to help!

The Story of IKC
In 2013, while working in a local gym as a personal trainer, Joey "JD" Durgin noticed many of his clients sipping on kombucha. A kombucha enthusiast himself, Joey made small gallon batches at home and dared his clients to compare his unfiltered, raw, kombucha to the store bought stuff. "Oh my God, can I buy this from you?!" one client inquired. Word spread and his production of kombucha increased to 20 gallons at a time. But Joey's wife was not pleased with the office being turned into a home brewery.
Enter Jim Bisha; Jim created the first ever kombucha BBQ sauce using kombucha vinegar that was too strong to drink, but perfect as a base for a sauce. A bottling company and a very talented graphic designer/photographer/kombucha fan Jenn Foy came on board and we created our first batch of Smidge's BBQ Sauce on May 11, 2015. Smidges BBQ Sauce was named for Jim's daughter (who was just a smidge on the ultrasound monitor). Soon after, Joey created JD's Hot Sauce. Our small company is growing slowly and surely, and we have received great reviews and a lot of support from the Ithaca community.
Joey and Jim plan to launch production and distribution of their flavored kombucha drinks and artisinal vinegars in 2016.
Joey Durgin has been in the fitness business for over a decade - he is a personal trainer and part owner of Infinity Athletics located at 730 Willow Ave in Ithaca. He has been known to organize fitness events for charity in the area like Mud Sweat and Cheers and help people change their lives through exercise and healthy eating. This focus on health and exercise allows Joey to help people reach their fullest potential and live their best life through hard work, nutrition, and diligence...and kombucha. He is excited to bring people unique, delicious products made with natural ingredients that support a healthy lifestyle.
Jim Bisha is a husband, father, rock climber, and general outdoor enthusiast who likes to push things a little farther to see what happens. He went to school at Virginia Tech for way too long for things that had nothing to do with kombucha. Jim doesn't sleep, he waits.
